In 2002, when fast food burgers were only the burgers people knew in Japan, Mr. Watanabe opened a small artisanal burger shop "Baker Bounce" in Setagaya, Tokyo. By utilizing skills and experience of Japanese Cuisine that he learnt since he was 18 years old for 3 years, hand-chopped and charcoal-grilled beef patty was a sensational and lots of burger fans visited his shop from all over Japan. Definitely Mr. Watanabe was a pioneer and one of the first people who made the today's burger trend in Japan as he opened a branch at Tokyo Mid Town in 2007 which has been one of the biggest shopping malls / business buildings and accomplished making 1.4 billion JPY as a total yearly sales which is literary a Japanese Burger Dream. Until he handed over the right of his company in 2021, he had sent a thousand apprentices of future burger chefs and owners to Japan's burger industry. In June 2023, Mr. Watanabe started his new brand "Burger Big Bang Project" with a small food track as a platform to train up hopeful future chefs to give his appreciation back to the industry. In the same month, he won the second year of Japan Burger Championship. Japan Burger's master Yoda has been back to the battlefield.
